Aspects of Winemaking from Moonstone Crossing Winery in Trinidad
Understanding the production of wine will increase your appreciation of wine. This course will include lecture, hands-on wine making, and wine tasting. The first class will cover the basics of winemaking from the harvesting of grapes, through grape crushing, fermentation and pressing, to barrel aging, bottling, and bottle aging. The second class will be “hands on” sorting and crushing wine grapes, “punching down” the caps of fermenting grapes, and pressing wine from fermentation. The final class will be a discussion of wine appreciation with an accompanying tasting of wines from barrel and from bottle.

Donald J. Bremm has a B.S. in microbiology and graduate degree in fisheries science. Don is a fisheries scientist at the consulting firm of Thomas R. Payne and Associates of Arcata. In 2000, Don trained as an apprentice winemaker under the tutelage of Bob Marr of Marr Cellars. After that first season of winemaking, Don and his partner Sharon Hanks secured space for commercial wine making at the Curtis and David Winery in Arcata. In 2005, Moonstone Crossing moved its winery operation to the present location overlooking Moonstone Beach.
Enjoy beautiful Redwood National and State Park at the perfect time of year for identifying Humboldt’s broad variety of tasty, beautiful and strange looking fungi... including poisonous ones! We won’t leave out those “L.B.M.s,” either – the “little brown mushrooms.”
We will take a bus – rain or shine – where the Roosevelt elk also love to roam and will make several stops to find mushrooms in sometimes hilly or uneven terrain. Since we might cross a creek or two, waterproof boots are suggested. Recommended (but not required) text Mushrooms Demystified by Dave Arora. Bring appropriate clothing (layers, raingear) comfortable shoes and water.

Dick Wild has been a trip leader, mushroom aficionado and member of the Mycological Society since its inception in 1972. He has identified and eaten over 70 varieties. He has picked mushrooms in Northern California, Montana, Colorado and Southern Germany in the Black Forest.

Making Herbal Gifts and Remedies from Common Garden Plants
Did you know that olive oil, beeswax, apple cider vinegar and vodka can be used to create a variety of herbal remedies? In this hands-on class, you will use common garden plants and ingredients to make a variety of herbal remedies. These make wonderful gifts for your friends and family! You’ll learn about the medicinal properties of the plants, and how to work with them to create your own herbal extracts, vinegars, infused oils, salves and lip balm. You’ll take home samples of the products made, plus a detailed handout with easy recipes. Fee includes samples of all products made in class and an extensive handout.

Julie Caldwell, M.A., is an herbalist, flower essence practitioner, and the founder of Humboldt Herbals in Old Town Eureka. She has been sharing her love and knowledge of medicinal plants since 1997, and has taught numerous classes and workshops for people of all ages. She loves to empower others with information about the healing properties of flowers, roots, barks and berries, and to help people incorporate these gifts from the plants into everyday life.
After this class, you will never look at a dandelion as “just a weed.” Explore local medicinal plants found along the trail to the Elk River Headwaters Forest. We’ll identify the plants and discuss historical and current medicinal uses. The Headwaters trail is very easy and paved most of the way, with very slight rises and falls in elevation. The entire walk will be approximately two miles. Bring water, and snacks if needed.
Meet in the parking lot at the Elk River Headwaters Forest at the end of Elk River Road in south Eureka at 8:45 a.m.

from Forecast to Sandbags
Got weather? Nancy Dean, the National Oceanic and Atmospheric Administration (NOAA) meteorologist-in-charge, will provide a lecture on the mission and organization of the National Weather Service. Weather forecasting basics will include a forecast exercise using information gathered that morning, with a tour of the station including sandbag training. See how atmospheric science affects human beings in so many ways!
Note: Everyone attends the Nov. 1 class. The lab at the weather station will be divided, because the facility is too small for the whole class. Half the class will go that same day at 1:30. The other half will go to the station on the following Sat., Nov. 8. You will indicate which day you want to attend the lab when you register.

Nancy Dean received her B.S. in atmospheric science from U. C. Davis. She worked for the NOAA; National Weather Service (NWS) in Great Falls and Billings, Montana; Riverside, Calif.; NWS Headquarters in Silver Springs, Md.; and since 1993 as meteorologist in charge in Eureka, Calif.

Do you like road trips traveling around the scenic parts of our state? Are you a closet rock-hound? Have you ever wondered why scenery in our state is so fantastically diverse? Do you like learning experiences that have hands-on activities as well as lecture? Then this class is for you. We will provide you with an understanding of the geologic processes and the rocks and sediment that produce the diverse landscapes of California.
Instructor will donate course fees to support HSU OLLI.

Harvey Kelsey has a B.A. from Princeton and Ph.D. from UC Santa Cruz in geology. Sue Cashman has a B.A. from Middlebury and Ph.D. from the University of Washington in geology. Both have taught at the university level for 30 years.
