Welcome!
Greetings! I'm Kathy D. Munoz, Professor of nutrition in the Department of Kinesiology and Recreation Administration, and a Registered Dietitian through the American Dietetic Association. Over the past 25 years, I've taught nutrition and health courses at Humboldt State University both using the traditional face-to-face delivery method and most recently, online asynchronous courses to meet the needs of students both on and off campus. Using online technology, I've developed four courses offered for students to earn a Certificate in Exercise Nutrition.
In addition to my teaching responsibiilties, I am currently the Graduate Coordinator for the Master of Science in Kinesiology program as well as conduct research in the areas of body composition, active living, and nutrition and exercise.
